An Apple Cake

There's always a story to tell and I am pleased that there is.
This is when I was in high school, a long before Sydney was even a plan.... when curiosity was at peak, desires were uncontrollable, focus was on a minus and interests were countless....when bhatbhatini was only in bhatbhatini and when Nigella and TLC the inspirations to bake and cook...when mamu and I tried our best to bake cakes... any small or big occasion, any gatherings or getaways we made sure to turn on the oven!! Most didn't look appealing but tasted good, some looked good and tasted great and some were awesome inside-out!!
Coming to the Apple cake, I came across one of the photos of a cake we made those days, "An apple cake". I can't quite remember the occasion, or may be there wasn't any.... however I still remember how well it turned out... I had layered the wedges of apple on the middle with cinnamon...and topped up with some nuts and raisins, it was one of the best bake!
A sweet memory like this should always be celebrated, so I made, "An Apple cake" again, but this time in my newly owned skillet!! I got a perfect review from those who ate it!! little crunchy edges, soft and spongy insides, perfect with the caramelised apples and that aroma of cinnamon!!

Here's what and how:
INGREDIENTS: For the Apple layer:
- 3 apples- peeled and cut in wedges.
- 2tblsp+2tspn sugar
-11/2 table spoon water
-1/2tsp cinnamon powder
For the Cake:
-1/4 cup melted butter
-6tbsp sugar
-1egg
-1tsp vanilla extract
-1 cup self-raising flour (if using plain flour-11/2tsp baking powder)
-1/2 cup milk
Method:
For the Apple layer:
(I used a skillet to cook the apple, coz I wanted to bake in it, but any pot can be used and the apples could be layered at the base of a cake tin)
-Heat the butter in the skillet, add the sugar and water, once it starts to bubble up, added the apple and cinnamon and cook until soft.
For the cake:
-preheat the oven,
-cream together the butter and sugar until light and fluffy, (I used a hand held mixture)
-beat the egg well,
- mix the vanilla extract,
-shift the flour and a tablespoon at a time altering with the tablespoon of milk,
- pour the mixture on top of the layered apple evenly, bake for 20 minutes at 160 degrees, use the toothpick method, if it comes out clean, let it cool, flip it on a plate or serve it right from the skillet, up to you.
